Crispy Purple Asparagus Skewers

This unique dish is sure to be a crowd pleaser.

Ingredients

  • 1 pound purple asparagus, cleaned in water and bottoms trimmed

  • 1/4 cup parmesan cheese, grated

  • 3/4 cup panko breadcrumbs

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 2 teaspoons Italian seasoning

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon lemon zest

  • 2 eggs

  • Thin kebob sticks (soaked in water, optional)

Directions

Step 1. 

Pre-heat oven to 475 F. In a small bow, mix parmesan, panko, salt, pepper, Italian seasoning, parsley, and lemon zest. Stir to combine, pour on a plate or wide shallow bowl and set aside.

Step 2. 

In another small bowl, add eggs and whisk until golden and combined.

Step 3. 

Carefully skewer the centers of the asparagus, leaving about half the skewer out at the end of the stalk.

Step 4.

Holding onto the skewer, brush the egg wash all over the asparagus and roll in panko crumbs, patting crumbs to adhere to the asparagus if necssary.

Step 5.

Place on parchment lined baking sheet and bake for 10-12 minutes until crispy and asparagus is tender but not overdone. Serve immediately.
