Easy No Churn Blackberry Ice Cream

Homemade ice cream without the ice cream maker!

Ingredients

  • 1 pound frozen blackberries (freeze berries for 1 hour if using fresh)

  • 1 teaspoon vanilla extract

  • 1 ½ cup heavy cream or one can full-fat coconut milk

  • 1/2 tablespoon lemon zest

  • 1/4 cup raw honey or maple syrup

Directions

Step 1. 

Add all ingredients to a food processor or blender. Puree until ingredients are incorporated and you get a smooth mixture.

Step 2.

Transfer mixture to a stainless steel 9x5” loaf pan and cover with plastic wrap.  Freeze for at least 4 hours.

Step 3.

Take ice cream out of the freeze and let sit for 15 to 20 minutes at room temperature before serving.
