Ingredients: 2 cups russet potatoes (peeled and shredded or cubed) 1 ½ cups French green beans, sliced (trimmed and cooked) 2 TBLS heavy cream 7 eggs 2 shallots (minced) 2 cloves garlic (minced) 2 TBLS olive oil 2 tsp turmeric (ground) 1 cup feta cheese (crumbled) Salt and pepper to taste
Preheat oven to 350F.
In a cast iron or ovenproof frying pan, fry potatoes in olive oil for 8-10 minutes until starting to cook through. Add shallots and garlic and cook for an additional couple minutes until fragrant.
. Whisk eggs with heavy cream, turmeric and salt and pepper to taste. Take pan off heat and pour eggs over potato mixture.
Top with sliced French green beans and feta cheese.
Bake until eggs are set, around 25 minutes. Remove from oven and let set for 10-15 minutes before cutting into wedges and serving warm.
