In a medium saucepan, bring water to a boil. Add beans and blanch for about 2 minutes, drain.
Place in an ice water bath to cool. Remove from water once cooled.
In a saute pan, add ghee and garlic cooking on medium heat for 2 min, stirring to soften the garlic and infuse the butter.
Add green beans and cook until tender-crisp; about 4-5 minutes.
Add lemon juice to pan and mix with beans.
Place beans on serving dish, top with cheese, lemon zest, and pinenuts.
