Make a large batch at the beginning of the week for a quick grab and go breakfast.
Preheat oven to 350 degrees and spray pan with olive oil or any non-stick spray.
Prepare pancake batter based on directions.
Fill each muffin tin about ¾ full.
Top each muffin with favorite ingredients.
Bake until the top of muffins are springy – approximately 15 minutes.
