Sautéed French Beans

Sautéed French Beans

A quick and healthy side dish perfect for any dinner.


  • ½ lb North Bay Produce French Green Beans (rinsed and trimmed if necessary) cut in half
  • ½ lb North Bay Produce Yellow French Beans (rinsed and trimmed if necessary) cut in half
  • 2 shallots (sliced thin)
  • 1 garlic clove (minced)
  • ½ cup carrots (julienne cut)
  • ½ red pepper (sliced thin)
  • Juice of ½ lemon
  • Zest of ½ lemon
  • 2 TBLS olive oil
  • Salt and pepper to taste


Step 1. 

On medium high heat place a large non-stick sauté pan and add olive oil swirling to coat.

Step 2. 

Add carrots and shallots cooking and stirring occasionally until both are starting to soften, about 2 minutes.

Step 3. 

. Add French beans and sauté stirring occasionally until tender crisp about 10 minutes.

Step 4. 

Add garlic and stir into mixture. 

Step 5. 

 Lastly add red peppers and sauté for about 5 more minutes until peppers are tender and vegetables are tender crisp.

Step 6. 

Pour lemon juice and lemon zest over vegetables and toss to coat. Transfer to serving dish. Serve immediately.

Sharon's Hint

Add fresh herbs like dill or tarragon to this dish to jazz it up! Add with lemon juice and omit the lemon zest.
