Veggie Stir Fry

Veggie Stir Fry

A quick and easy Meatless Monday meal for the whole family.


  • Cauliflower rice 
  • 1/4 cup sliced red onion 
  • 1 cup broccoli 
  • 1/2 cup sliced carrots 
  • 1/2 cup sliced mushrooms 
  • 1/2 cup snow peas 
  • 1/2 tbs minced garlic 
  • 1 tbs olive oil 
  • Salt and pepper to taste
  • Stir fry sauce, store bought or homemade 


Step 1. 

Cook cauliflower rice as directed on package. 

Step 2. 

In a large sauce pan over medium heat, add olive oil and garlic stirring until fragrant, 1-2 minutes. Add onion and carrots and cook for 3-4 minutes. 

Step 3. 

Add mushrooms, broccoli, and snap peas to pan. Allow to cook for 3-4 minutes or until slightly tender.  Add salt and pepper to taste. 

Step 4. 

Add in cooked cauliflower rice and mix well with cooked veggies. 

Step 5. 

Add stir fry sauce and mix thoroughly. Remove from heat and serve immediately.

If you are not a fan of cauliflower rice, brown or white rice works just as well.
