Asian Sesame Shrimp & Snow Peas

Ingredients

  • 1 lb. shrimp

  • 8 oz. snow peas

  • 3 tablespoons sesame oil

  • 1 ½ tablespoon ginger (julienne)

  • 1 teaspoon garlic finely chopped

  • ½ cup yellow and orange carrot (julienne)

  • ½ cup red pepper (sliced into 1-inch strips)

  • salt to taste

  • black sesame seeds

  • sesame seeds (toasted)

    Sauce Ingredients:

  • 3 tablespoons soy sauce

  • 1 tablespoon corn starch

  • 1 ½ tablespoons honey

  • 1 teaspoon garlic finely chopped

  • Red pepper flakes (to taste)

  • 2 tablespoons lime juice

Directions

Step 1.

Whisk sauce ingredients in a medium bowl until smooth and set aside.

Step 2.

In a cast iron pan or large non-stick pan, add sesame oil and heat on high until the oil is glossy.

Step 3.

Add ginger and garlic and cook for a few seconds until fragrant.

Step 4.

Add red chili flakes.

Step 5.

Add carrots, snow peas, and red pepper. Toss to cook evenly. Cook until vegetables are crisp-tender.

Step 6.

Add shrimp and cook for 30 seconds to 1 minute depending on the size of the shrimp.

Step 7.

Add sauce and stir into the mixture. Continue to stir constantly, so the sauce does not clump. Cook until shrimp are cooked through and tender.

Step 8.

Add sesame seeds and stir.

Step 9.

On serving platter, place stir fry mixture and garnish with additional sesame seeds.
