Curried Cauliflower Rice with Sugar Snap Peas & Mango

Ingredients

  • 4 tablespoons olive oil

  • 1/2 onion, diced

  • 2 cloves garlic, minced

  • 1 cup red bell pepper, sliced into inch long strips

  • 8 oz. sugar snap peas

  • 8 oz. broccoli, chopped into bite sized pieces

  • 1 ripe mango, peeled and chunked

  • 1.5 tablespoons yellow curry powder

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon chicken bouillon powder

  • 1/2 teaspoon thyme

  • 1/2 teaspoon salt

  • 1 lb. cauliflower rice

Directions

Step 1.

Add olive oil to a large skillet and heat. Sauté onions and garlic till translucent.

Step 2.

Add the red bell peppers and broccoli florets and cook for 5 minutes.

Step 3.

Add the thyme, curry, bouillon powder, black, pepper and salt. Stir for about a minute.

Step 4.

Add the cauliflower rice and sugar snap peas, and cook for 5-10 minutes on medium heat, stirring often.

Step 5.

Add mango chunks and cook for 2 minutes longer until mango is just warmed through but still firm. Taste for salt and adjust.
