Oatmeal Cookie Energy Bites

Ingredients

  • 1/3 cup sunflower seeds (raw) lightly chopped

  • 1 cup old fashioned rolled oats

  • 1/3 cup dried cranberries

  • 1 TBLS orange juice

  • zest from 1 orange

  • ¼ cup mini chocolate chips (optional)

  • 1/2 teaspoon cinnamon

  • pinch of kosher salt

  • 1/3 cup peanut butter (or nut butter of your choice)

  • 1 TBLS honey

  • 1 teaspoon vanilla extract

Sharon's Hint: Add your favorite dried fruits and nuts.

Directions

Step 1.

In a medium bowl, add cranberries with the orange juice. Toss until combined and let them sit for 5 minutes.

Step 2.

To the bowl, add the oats, sunflower seeds. orange zest, chocolate chips, cinnamon and salt. Stir to combine.

Step 3.

Add the peanut butter (or nut butter of your choice), maple syrup and vanilla extract and stir until well combined.

Step 4.

With wet hands (makes the rolling process easier), roll the mixture into about 1 1/2 inch balls and place on a parchment lined baking sheet. You should get about 15 bites out of the mixture.

Step 5.

Place the baking sheet in the freezer for about 20 minutes to set. Store bites in a ziplock bag or airtight container in the refrigerator or freezer. Makes appx. 15 energy balls.
