Ingredients
Salad:

1 pound packaged baby spinach

2 cups strawberries (cut in quarters) reserve ½ cup for garnish

½ cup feta cheese (crumbled)

6-10 mint leaves (torn)

½ cup walnuts (toasted and chopped)
Dressing:

¼ cup balsamic vinegar (aged preferred)
-
1 tsp honey Dijon mustard
-
3 TBLS maple syrup
-
Pinch of kosher salt (to taste)

2 TBLS olive oil
Sharon's Hint: The dressing can be made ahead of time and used for a week.
Directions
Step 1.
In a large bowl add spinach, strawberries, mint leaves and walnuts. Toss to evenly distribute. Top with feta cheese and reserved strawberries.
Step 2.
To make dressing, combine all dressing ingredients into a jar with a tight fitting lid (or a small bowl) and shake (if using jar) or whisk (if using bowl) until combined.
Step 3.
Serve dressing on the side.
